Creamy Dill Chicken Sheet Pan Dinner (Dairy Free)

Ingredients

  • 4 medium chicken thighs (bone in)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp ground pepper
  • 1/4 cup mayonnaise (I used vegenaise)
  • 2 tbsp fresh dill (chopped)
  • 3 cloves fresh garlic (finely chopped)
  • 3 greenonions (chopped)
  • 5 lg carrots
  • 3-4 medium potatoes

Instructions

  1. Preheat oven to 375 F

  2. Line a baking sheet with parchment paper

  3. In a large bowl, combine mayo, dill, chopped garlic and onions.

  4. Add all ingredients to a bowl and mix so that everything is covered in the dill marinade.

  5. Spread mixture on sheet pan lined with parchment paper.

  6. Bake for 35-40 mins depending on your oven.
