These Vegan Matcha Blackberry muffins are the perfect adult breakfast or snack. The ingredient combo will fuel your day and give you the kickstart of energy that you need. Matcha really is an incredible addition to your life, it’s one of the healthiest types of tea that you can include in your diet to see an improvement in your overall health. Matcha tea is one of the best things you can add to your diet to improve your overall digestive health and help your body to detox. Drinkin matcha is fun, but eating matcha is next level!

Vegan Matcha Blackberry Muffins (Gluten Free)
  • 2 3/4 cups Oat flour Very tightly packed.
  • 3/4 tsp Baking soda
  • 1 tsp Baking Powder
  • 1/2 tsp sea salt
  • 1 tbsp Matha
  • 1/2 cup Coconut Oil Melted.
  • 1 cup Oat milk
  • 2 Chia Eggs 1 chia egg = 1 tbsp chia plus 2 tbsp water
  • 1/2 cup Maple Syrup
  • 1/2 cup Apple sauce (Unsweetened)
  • 1 tsp Vanilla
  • 1 cup Blackberries
  1. Preheat oven to 350 F and grease a muffin tin with coconut oil.

  2. Create your chia eggs and set aside. ( 1 tbsp chia + 2 tbsp water = 1 egg)

  3. Combine all dry ingredients oat flour, bakins soda, baking powder, salt and matcha. I used a whisk to make sure it was mixed thoroughly.

  4. In a seperate bowl, whisk together all wet ingredients, coconut oil, chia eggs, oat milk, maple syrup, apple sauce and vanilla.

  5. Add dry ingredients into the wet ingredients and mix thoroughly with a spatula. Only add about 1 cup of dry ingredients at a time.

  6. Add in 1 cup of blackberries and then spoon ingredients into your muffin tins.

  7. Bake at 350 F for 30 mins. I would check at 25 mins as ovens vary!

  8. Cool before serving and freeze them if you want to enjoy fresh on another day!
