I had to post this amazing recipe modified slightly from @elavegan It is super easy and super good
I only had one kid who ate it for dinner, but in my books that’s a win!

Recipe:
2 tbsp olive oil
1 medium onion diced
2 potatoes peeled & diced
3 carrots diced
3 cloves garlic finely chopped
4 cups vegetable broth
1 tsp onion powder
1/2 tsp smoked paprika
Pinch of red pepper flakes
Sea salt & pepper to taste
1/3 cup nutritional yeast
1/2 cup cashews
1 large head broccoli (about 3 cups of florets) fresh or frozen

Instructions:
1️⃣ Sauté garlic, onions, carrots and potatoes, onion powder, paprika and red pepper flakes, in sauce pan with oil. 5 mins or so.
2️⃣ Add in vegetable broth bring to a boil and let simmer for 20 mins.
3️⃣ Transfer to a blender and add nutritional yeast plus cashews. Blend till smooth.
4️⃣ Steam broccoli  in another pot.
5️⃣ Pour soup into pot again and add broccoli. Add salt and pepper to taste.
