I love garlic, but I truly dislike chopping garlic. Making your own garlic puree is really quite simple and it’s great to always have it in the fridge to throw into multiple recipes. Did you know that garlic has potent medicinal properties and was used in ancient medicine for many ailments? First of all, it’s full of amazing nutrients like vitamin C, manganese, vitamin B6, but it also has a biological component called allicin. Allicin has potent medicinal properties, from immune enhancement, anti-inflammatory, to anti-bacterial elements for skin conditions and fungal infections. It’s complex how it works and becomes helpful to the body, but definitely good reasons to use as much as possible when feeding the kids! 

Course: Main stay in the fridge
Ingredients
  • 2 garlic heads
  • 1/2 cup virgin olive oil
  • 1/2 tsp salt
  • 1/2 lemon squeezed for juice
Instructions
  1. Peel all cloves of the two garlic heads

  2. Place garlic cloves, virgin olive oil, salt, and lemon juice in blender

  3. Blend for 2 mins, depending on type of blender

  4. Place mixture in sealed jar 

  5. Make sure to keep the jar sealed and in the refrigerator

  6. This is a potent mixture, so use ½ tsp usually for potatoes, vegetables etc.

  7. It can be stored in the refrigerator for up to one month (thanks to the lemon juice)
