Apple Cinnamon Overnight Oats

These apple cinnamon overnight oats are the perfect breakfast for that crazy morning on the go or the quick and easy afternoon snack! Are you on the go this March Break? Or maybe you are just on the go always, like my family. My girls love overnight oats and they love helping to make them. There is no baking involved, just measuring, adding ingredients, some stiring and a little pouring, this sounds like the perfect mixture of tasks for kids in the kitchen. What I also love about this recipe, is that the measurements are for individual portions, so if each child wanted to personalize their own ingredients they can. I like to make overnight oats in mason jars then my girls can grab the glass markers and write their names and draw pictures. It adds a little fun and makes morning time more exciting. My favourite ingredient in these overnight oats is the cinnamon, not only does it make the base of flavour but cinnamon also helps to balance out blood sugars. Cinnamon is said to actually slow the rate at which the stomach empties which can help the bodies ability to respond to insulin, which essentially slows the rise of blood sugar levels. [2] I say YES to this! Those blood sugar spikes in kids can lead to tantrums and not so fun vacation time!

Servings: 1 Individual Serving
  • 3/4 Cup Oats
  • 1 Tsp Hemp Seeds
  • 2 Tbsp Chopped apples (small bite size)
  • 1 Tsp Cinnamon
  • 1 Tbsp Coconut Oil (melted)
  • 1 Tbsp Maple Syrup
  • 1/2 Cup Nut milk
  1. Chop an apple, preferrably red with skin on, into small bite size pieces.

  2. I tend to do the mixing in a larger bowl, so you can stir everything thoroughly before placing in mason jar overnight.

  3. In a bowl, mix together oats, hemp, cinnamon, coconut oil, maple syrup and apples. Make sure to combine throughly!

  4. Place mixture and pack firmly in a wide mouth 16 oz mason jar. Then pour 1/2 cup of nut milk overtop.  Seal with lid and place in fridge.

  5. These can sit in the fridge for a few days and be eaten whenever.  If you are looking for a quick snack, the oats will be best if they are in the fridge for atleast 2 hrs but overnight is the best!

Chocolate coconut overnight oats are an easy sell in my house.  They are full of all the right things to ensure your kid will be off to the races.  Cacao packs a ton of great antioxidants and it is the natural sugar free state of chocolate.  You may ask, what's the difference between cacao and cocoa? Well, it's simple, cacao is a less unprocessed form of cocoa. Cacao powder comes from cold pressing unroasted cacao beans, this keeps the living enzymes and removes the fat (cocoa butter) versus cocoa is the result of roasting cacao beans at high temperatures, unfortunately this reduces the enzyme content and lowers the overall nutritional value.  In my books, if you can, use cacao poweder in place of cocoa powder whenever possible!

Servings: 1 Serving
  • 2/3 cup Oats (you can substitute gluten-free if you like)
  • 3/4 cup Almond milk (or another milk you prefer)
  • 1/4 tsp Cacao powder
  • 1 tsp Coconut oil
  • 1 tbsp Honey (or maple syrup)
  • 1 tsp Almond butter (or any other nut butter)
  • Sliced banana
  • 1 tsp Yogurt
  • 1 tsp Flaked unsweetened coconut
  1. For overnight oats you need a container you can put a lid on.  I use 8 oz wide mouth canning mason jars.

  2. Melt the tsp of coconut oil.

  3. Place oats in mason jar, stir in cacao powder, then melted coconut oil.

  4. Pour almond milk over top and seal with lid.

  5. Place in fridge overnight (truth be told, they can be ready to serve in 30 mins if you are in a pinch).

  6. Add toppings as you see fit! This is really where you can have some fun or work with what you have!
