I love chocolate cake but I don't eat dairy and I don't always like to cook with eggs, so for years I have been perfecting the best vegan chocolate cake. This is my family birthday cake secret, my peeps love it and anyone who tries it for the first time always asks for the recipe. When I tell them that it's vegan they look at me strangely. This could also be made into a nut free cake by substituting the almond milk for soy milk! Enjoy!
- 2 cups almond milk Try my recipe for making your own.
- 2/3 cup rice bran oil Or use another baking oil you prefer.
- 2 tsps apple cider vinegar
- 3 tsps vanilla extract
- 1 1/2 cup granulated sugar I use organic cane sugar.
- 2 cups all purpose flour
- 2/3 cup cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 4 cups powdered icing sugar
- 3/4 cup vegan butter I use the brand Earth Balance
- 2/3 cup cacao powder
- 1 tsp vanilla
Preheat oven to 350 degrees F (I use convection)
Mix together almond milk, oil, sugar, vanilla, apple cider vinegar and set aside
Whisk together all other dry ingredients until fully mixed, including flour, baking soda, baking powder, sea salt, cacao powder
Add dry mixture into wet and mix using an electric hang mixer, ensure it is fully blended.
Oil 2 8" diameter pans
Pour cake mixture evenly into both
Bake for 30 mins (on convection), ovens may vary so make sure to use a tooth pick in the center to test!
Let cakes cool a bit before removing from pan. Once removed, allow them too cool for atleast 20 mins before trying to ice them
Cut butter into small chunks
Add all ingredients together and blend using a handmixer (the icing sugar will spray so be careful not to make too much of a mess!)
You can chill the icing a bit while you wait for the cake to cool, not too much though or it will be hard to spread
When icing, make sure to put a significant amount in the centre of the two cakes, don't be shy!
I'm not very good at actually putting the icing on the cake, so I have no further direction. lol
