Looking for a new muffin to bake? Look no further. These are packed with sweet potato and are delish! You may ask why sweet potato? Well, this was somewhat of an experiment on my end mostly because my girls don't like pumpkin muffins, nor do they like alot of spices. So I switched up the pumpkin in a recipe, kept the spices only to cinnamon and BAM! They are delish. Sweet potato also provides some great nutrients so it's perfect for a snack. Here's what you need to know about Sweet Potato:
1. It is a great source of Vitamin A in the form of beta-carotene. Which plays a critical role in healthy vision, neurological function and skin!
2. It also has a great amount of Vitamin C, which we know is helpful in fighting off those flu bugs ans so much more!
3. It also has Vitamin B6, which is important for many areas of our body, protecting the immune system, maintaining healthy skin, mental state and hormone control, just to name a few.
Long and short, there are many reasons to pack some sweet potato into your daily meals and snacks!
- 1 cup organic sugar
- 2 eggs
- 1 cup sweet potato puree
- 3/4 cup coconut oil (or your oil of choice)
- 2 cups spelt flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1 cup chocolate chips
Preheat oven to 350 degrees F
Line medium sized muffin tins with paper cups or grease
Combine wet ingredients (oil, eggs, sweet potato) and sugar into bowl and blend.
Combine all dry ingredients (flour, cinnamon, baking soda, baking powder and salt) and whisk together.
Pour dry ingredients into wet and combine throughly. I used a hand mixer.
Add chocolat chips if desired. They will definitely be sweet enough without!
Bake at 350 degrees F for 20 mins (Every oven is different so I would check them at 15 mins!)
