This is a simple one pot recipe that could feed the masses or just the kids on a busy night. It’s a classic 7 ingredient sloppy joe recipe with some red peppers for added Vitamin C, served over focaccia bread to add a little class. This dish can also be turned vegan by simply replacing the ground beef with 2 cups of lentils (colour of your choice). This one pot dish is just the right sweetness (with no refined sugars) to make the kids ask for more and it warms anyone from the inside out. It’s a sure crowd pleaser and can be doubled up if you have surprise guests!
- 1.5 lbs lean ground beed (or 2 cups cooked lentils)
- 2 tbsp olive oil
- 5 cloves garlic (finely chopped)
- 1 medium cooking onion
- 2 cups tomato puree
- 1/2 cup tomato paste
- 1 medium red pepper (finely chopped, even puree it)
- 1/4 cup maple syrup
- 1 tbsp dijon mustard
- 2 tbsp worcestershire sauce
- 1 tsp sea salt (or to taste)
- 1 large foccacia bread (cut into bite size squares)
- cayenne pepper to taste
- 1/2 cup chopped parsley
Pre-heat oven to 350 degrees F.
Add 2 tbsp of olive oil to your "one" pot over the stove top.
In the pot, sautee garlic, onion & ground beef for roughly 5 mins (just until beef is slightly brown and onions are translucent).
Take pot off stove top and add all other ingredients (except bread and parsley), stir until completely combined.
Add the lid to the pot and place in pre-heated oven (350 degrees F) for 30 mins.
Cut Focaccia bread into bite size pieces.
Serve in bowls with bread on the bottom and spoon sloppy joe mixture on top.
Add chopped parsley if desired.
