These are my 3 favourite snack muffins, you know the ones that get you through the week! I love muffins, I find them to be the perfect comfort food and remind me of my Mom’s baking. Even when I was older, everytime I arrived at the cottage there was usually muffins made. These are 3 different great options, some with regular sugar, some refined sugar free. If I had to pick a favourite it would be the blueberry one!
Vegan Apple Cinnamon Muffins
These vegan apple cinnamon muffins are so incredible during apple season but I tend to make them regularly. They are perfectly moist and have the best texture and apple in every bite. There is something about apples and cinnamon that make me happy!
Vegan Blueberry Applesauce Oat Muffins
These vegan blueberry applesauce oat muffins are packed with goodness! I used applesauce for extra moisture and nutrients which gives it a fabulous texture and makes it a win as the perfect snack. The great thing about fruit muffins is the natural sweetness, so I only added 1/2 cup of maple syrup, which means no refined sugars!
Sweet Potato Chocolate Chip Muffins
These sweet potato chocolate chip muffins are always a crowd favourite. These delicious muffins were somewhat of an experiment on my end, mostly because my girls don’t like pumpkin muffins, nor do they like alot of spices. So I switched up the pumpkin in a recipe, kept the spices only to cinnamon and BAM! They are delish. Sweet potato also provides some great nutrients so it’s perfect for a snack to keep energy going!
