I love lemon and I love the taste of lemon with chicken.  I didn't always like this as a kid, in fact lemon was low on my list of likes but my kids are different. This lemon roasted garlic chicken is their favourite dinner.  It's also my favourite to make because I usually always have the ingredients on hand and it's simple. All you need is a lemon, garlic, olive oil, salt & pepper and a whole chicken (organic if you can swing it!) You can make the skin super crispy just follow the directions!

  • 1/2 cup olive oil
  • 3 tsps sea salt (flaked)
  • 1 tsp pepper
  • 1 lg lemon
  • 6 cloves garlic
  1. pre-heat oven to 425 degrees

  2. cut lemon in to small chunks (half quarters with skin)

  3. peel 6 cloves of garlic

  4. place garlic and lemon chunks with 1 tsp salt and 1/2 tsp pepper inside chicken carvity

  5. put chicken in a roasting pan and cover with olive oil and rub salt & pepper combination generously all over the chicken (get in all the nooks)

  6. place the rest of the olive oil in the base of the pan

  7. place in oven and roast at 425 degrees for 1 1/2 hours and baste every 1/2 hour (this is key)

  8. if using a thermometer the chicken thigh should register 170 degrees F, to ensure cooked thoroughly

  9. Let sit 10 mins post roasting before cutting

Recipe Notes

The key to this recipe is the basting every half hour to keep the moisture in, since we are cooking it at such a high temperature.  It may seem like not enough oil in the pan at first, but as the juices of the chicken flow out, the pan will have lots of moisture. The skin will come out super crispy and the chicken super moist. Enjoy!
