These healthyish peanut butter eggs are the perfect treat for Easter baking but also can be the yummiest treat anytime. They are full of peanut butter, quinoa puffs, maple syrup and a dash of almond flour, you cannot go wrong!

Healthy Peanut Butter Eggs
Ingredients
Peanut Butter Filling
  • 3/4 cup peanut butter
  • 2 tbsp almond flour
  • 1 tbsp maple syrup
  • 1/4 cup rice crispies or quinoa puffs
Chocolate Coating
  • 1/4-1/2 cup chocolate chips
  • 1 tsp coconut oil
Instructions
  1. Combine peanut butter, almond flour, maple syrup and rice crispies in a bowl.

  2. Form peanut butter mixture into eggs, small or larger. Place in fridge for 30-60 mins.

  3. Melt chocolate over stove top with coconut oil, you can also do this in the microwave.

  4. Dip your eggs into the chocolate, decorate if desired then place back in the fridge for chocolate coating to harden.

They are so easy to whip up and could be decorated as you see fit.
