For years now, when my girls arrive at the cottage my Mom makes them this simple one pot, 5 ingredient dish that they gobble down. I'm always amazed at how well they eat it. I took my Mom's recipe, made some minor changes and here it is! This one pot dinner is simple, brings some traditional flavours together and most importantly gives a balance of nutrition to keep your kids going. Two of my favourite vegetables, sweet potatoes and carrots are the base layer of this dish. First and foremost, these two vegetables are root vegetables, there is so much to be said about root vegetables. What do I mean? Root vegetables are the perfect comfort food, they are rich in nutrients and give you a sense of grounding which is a perfect base for a comfort food dish. Also, these two root vegetables are high in carotenoids which help prevent cancer by repairing damaged DNA and they are high in vitamin A for vision, neurological function and healthy skin! It's also a fat soluble vitamin and this dish has the perfect amount of fat for absorbing! It has simple ingredients, simple to make and only one pot to wash! Enjoy.
- 1.5 lbs Lean ground beef
- 4 cups Peeled and chopped sweet potato (bite size) Approximately 2 sweet potatoes
- 2 cups Peeled and chopped carrots (bite size) Approximately 6 carrots
- 2 cups Tomato soup (approximately one can)
- 1 can Baked beans (try to find the one with the best ingredients)
- 4 tbsps olive oil
- 2 tsps seasoning salt or sea salt
Preheat oven to 350 degress farenheit,
Peel and chop (bite size) approximately two sweet potatoes.
Peel and chop (bite size) approximately 6 medium size carrots.
Combine sweet potatoes and carrots in a mixing bowl, add olive oil and seasoning salt. Thoroughly mix until all sweet potatoes and carrots are covered with seasoning.
Pour sweet potatoe and carrot mixture on the bottom of a roasting pot. Spread so the bottom is completely covered.
Place lean ground beef in a layer over top of the sweet potatoe and carrot mixture.
Our tomato soup over all layers in the pot and then top with a layer of the canned beans.
Cover with lid and place in over for 1.5 hrs. Ovens may vary so keep an eye on it. There is no need to stir and you could also place this in a slow cooker for the day!
