These gluten free almond chia butter balls are a treat! What I love about these is, if you are wanting a healthier (not so much sugar version) roll them in the coconut option. If you are looking for a fun dessert, choose door number 2 and roll them in coconut sugar, either way you will win over your kids. These are so fun to make together, because they can be sticky, there is stirring, rolling and no baking! Plus you can eat them as soon as they are done, or throw them in the fridge or freezer for later. The magic ingredient in these yummy treats, is the chia. Here are 5 reasons to eat more chia.

- 1.5 Cup Almond Butter
- 1/2 Cup Honey
- 1/2 Cup Coconut Flour
- 1/2 Cup Chia Seeds (White or black, your choice)
- 1/4 Cup Coconut sugar (for coating)
- 1/4 Cup Shredded unsweetened coconut (for coating)
The best way to mix this recipe up is in a food processor. If you have one, you can add all ingredients at once an just mix. If you don't have one read below!
In a mixing bowl add almond butter and honey, combine together with a spoon or a fork depending on what you find easier.
Then add coconut flour to mixture and combine thoroughly.
Final step is to add in the chia and stir. The mixture will be thick and sticky!
Scoop out a spoonful and roll in your hands to make small balls. You may want to use a little coconut oil on your hands to help with the stickiness.
Place the 1/4 cup of coconut sugar and 1/4 cup of unsweetened shredded coconuts in seperate bowls.
Roll the almond butter balls in the mixture you prefer until coated!
These treats can be eaten right away or placed in fridge or freezer until later!
