This creamy dill chicken sheet pan dinner includes chicken thighs with the bone in, this is my favourite cut of chicken. I find this simple dinner so creamy and full of that amazing dill flavour. All the ingredients get combined in one bowl, so the clean up will make your night even easier. I go on dill kicks and to be honest, don’t they give you a ridiculous amount of dill in a bunch, so best to make as many dill dishes as you can!
- 4 medium chicken thighs (bone in)
- 2 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp ground pepper
- 1/4 cup mayonnaise (I used vegenaise)
- 2 tbsp fresh dill (chopped)
- 3 cloves fresh garlic (finely chopped)
- 3 greenonions (chopped)
- 5 lg carrots
- 3-4 medium potatoes
Preheat oven to 375 F
Line a baking sheet with parchment paper
In a large bowl, combine mayo, dill, chopped garlic and onions.
Add all ingredients to a bowl and mix so that everything is covered in the dill marinade.
Spread mixture on sheet pan lined with parchment paper.
Bake for 35-40 mins depending on your oven.
