When its blueberry season you make blueberry muffins, right? Of course! I packed these with applesauce for extra nutrients and moisture which gives it a fabulous texture and makes it a win as the perfect snack. The great thing about fruit muffins is the natural sweetness, so I only added 1/2 cup of maple syrup, which means no refined sugars!

Servings: 12 Muffins
  • 1 1/2 cup Spelt flour
  • 1/2 cup Maple syrup
  • 1/2 cup Oats
  • 1 cup Apple sauce
  • 1.5 tsp Baking powder
  • 1 tsp Salt
  • 1 tsp Vanilla
  • 1 tbs Flax meal mixed with 3 tbs water Egg replacer
  • 1/2 cup Coconut oil (or another oil you like)
  1. Preheat oven to 375 degrees F

  2. Line muffin tin or grease with coconut oil

  3. Melt 1/2 cup of coconut oil

  4. Combine all dry ingredients. spelt flour, oats, baking powder, salt. Mix well

  5. Add in wet ingredients, applesauce, maple syrup, egg, coconut oil and vanilla. 

  6. Stir in blueberries and mix well, then spoon into muffin tins (3/4 full)

  7. Bake at 375 degrees F for 18 minutes
